Recreating Skinny Taste - Make this!

I haven't posted much about cooking lately.
For one reason - I haven't been doing as much as I would like, but when I do, my pictures generally suck.
After last night's meal I decided, who cares and to post anyway because I really wanted to share how much I like this recipe.
It's from my one of my favorite sites, Gina's Skinny Taste.
When I saw her post about the Jalapeno Popper Chicken earlier this week I knew we had to try it.
It doesn't hurt that they have fresh jalapenos at the Farmer's Market right now.

Brad and I 'tag team' dinner most nights and last night was one of them.
I made the filling for the chicken, then went to the gym, he came home from the gym, and stuffed the chicken and rolled it up and got it ready to bake.

I didn't get pictures of the entire process, but take my word for it.

We took the seeds out of our jalapenos, but however you like it, it's good.
 I noticed in the picture on Gina's site that she served it with a black bean and corn salad so I tried to recreate that as well, but threw in some tomatoes and cilantro.
Pretty yummy.
So, not a very exciting post today but I really wanted to share and let you know that you should add this to next week's meal plan!

For some reason in my goodle reader the small picture of the chicken looked like little pigs. Not kidding. I was like what the heck is Dee eating??? Ha.

Yum! I wish the hubs eat cream cheese :( I love Gina's site. Definitely my go to for quick dinner recipes.

YUM -- I am definitely going to give this a whirl. Her recipes rarely dissapoint.
