Camping in Whitetop, Virginia

We spent the weekend in what I consider one of the most beautiful places in America.
Whitetop, Virginia.

Miles and miles of mountains, Christmas tree farms, rushing river and the Virginia Creeper Trail.
My first visit to this area was 2-years ago when we stayed in Abingdon and rode the trail during the Spring.

Having enjoyed it so much, we decided to make Whitetop our destination for this year's annual Summer camping trip with our friends Katie and Josh, and Aaron and Craig.
After doing some research, and a request by Brad that it NOT be hot where we camped, I decided on the VA Creeper Trail Campground.
The reviews seemed to be good and it's at the very tippy top of the mountain, literally right across the street from the trail head.
It's a local Christmas tree farmer who has converted part of his land into a campground.
It was more scenic than I ever imagined.
This was the view from the front of our camper.

We all took a 1/2 day at work and made the trek up the mountain on Friday.
A little harder with our camper because the campground sits at 3500-feet.
It didn't take us girls long to break out the wine and cheese.
And, get ready for dinner.
Don't think for a second that I left my travel Vinturi at home.
It came in pretty handy!
We made everything festive and fun and got ready for our annual fish fry!
All while taking in the view.
As the evening went on things got pretty rowdy with a few games of C-R-L.
Has anyone else played this game?
I'm not a huge fan of games, but this grew on me.
Good times!
The next morning we got up and ready to hit the Creeper trail!
Except that it literally rained all morning long.
We tried waiting it out.
We even headed up to the campground store to talk with owner Ohlaf about the weather and to get his opinion.
He told us that it was suppose to rain all day and that if we did the trail to expect our clothes to get ruined because of mud.
We made a group decision to bag it.
Bummed out, we decided the next best thing to do was to head into town and hit up the local winery.
This was our 2nd visit to the Abingdon Winery.
Such a cute little place along the river.
People come right off the trail to enjoy a little vino.
The guys skipped the tasting and sat outside at one of the tables.
They joked at just how funny they must have looked!
LOL!
Then, we joined them.
Wouldn't you know, the weather down in Damascus was gorgeous.
Go figure.
After the winery we headed to a local pizza place for lunch.
Our drive through Abingdon was gorgeous.
Not sure what's up with the guy at the bar.
After lunch we headed back up to camp.
We made friends with some of our neighbors who happened to be from Charlotte too.
Such a fun weekend!
We all agree, that we were bummed we didn't do the trail but we still had a GREAT time none the less.
If you're ever in Southwest Virginia I suggest you visiting this area.
There is also Grayson Highlands State Park nearby too.

Shelby's Crawling!!

I think this blog is about to become officially for those who really care about our lives and what Shelby is doing.
That's because I'm posting about Shelby crawling for the first time!

We knew it was getting ready to happen over the weekend but today I saw it with my own two eyeballs for the very first time!

Yummy Healthy Appetizer

I try and have a veggie at every meal no matter what.
It just does not seem right not too.
So, on Friday I was out of veggies and went to Harris Teeter and everything was outrageous expensive when it came to veggies.
That was until I saw the eggplant on sale for $1.25

I thought to myself...
'I can have Brad grill it and I can put something on it to where he will like it.'

Sure Enough!

No formal recipe kids.
It's a simple:

*Slice your eggplant into pieces
(then toss them around in balsamic, olive oil, salt, pepper)
*Top slice of eggplant with a fresh tomato slice and slice of mozzarella.
* Then top with another slice of eggplant
* Secure together with a toothpick

* Put on grill on each side for 7-minutes taking out the toothpick once the cheese starts to melt.

Take off and enjoy!!!!!!
Brad doesn't even like eggplant and he LOVED this!!
We'll totally be doing this for friends soon!

Charlotte Blogger Cookout

We had our very first Charlotte Blogger cookout and I'm going to call it a success!
Thanks SO VERY MUCH to Classic Annie for hosting all of us!
Everything was perfect.
 And, yummy...
Shelby even got to meet Mills!
 And, all of the other babies born just a month or so before her!
Faith was due the same day as I was with the twins and Rachel had M a month and half before.
 Twins!!
 Shelby and April were reunited!
Classic Annie's house was the perfect size for our group of 30+
 So fun for everyone to meet each other's husbands and babies.
 We all felt like we knew each other because we read each other's IG, Twitter and blog updates!
 Babies for days!!

5 on Friday


I'm linking up again this Friday for the 5 things I'm loving lately!
#1. Shelby is 7-months old today! We are amazed at how much she has grown!
Her school is so great in that they do arts and crafts with them then send us home with pictures.
This picture was from July 3rd. I just love the hat and doesn't she look so grown up?
Brad can't stand it. He wants her to stay a baby.



#2. I'm loving that I'm 3 or 4 pounds from my goal weight! I want to be 118(I'm 5'4 1/2"), and yesterday I got on the scale and it said 120!
I couldn't believe it! 
Granted this morning it said 122, after eating a couple of pieces of pizza last night. BUT STILL! I was about 125 when I got pregnant, then gained 28-pounds, so this is the last of it, that I wanted to lose before I got pregnant.
I haven't even been working out as much as I should because of my toe issue and what not.
I've learned that it really is about food.


My determination really kicked in with this dress. 

I thought I was doing pretty good until I put it on and it was tight in the chest and rib area. I made it my mission to have it look better.

Instead of allowing myself to eat whatever on the weekends, I've stuck to healthy eating and moderate portions. This my friends, I believe has been key!!
I hope to lose this last little bit even if it takes me a while!

#3. Loving that these flowers have been alive for 2-weeks now! All thanks to my Mom's advice on putting them in straight up ginger ale. 
You can do it with any flowers and it will help them live. It's the sugar they like.

#4. Old photos! My cousin posted this to Facebook last night and I just laughed. 
This was 1995, I was 19-years old and getting ready to enter my junior year in college.

#5. Last but not least I'm loving that we have fun plans for the entire weekend! Cooking out, boating and hanging with my 2favs!
