Brad's Mexican Pizza

I'm not sure about you but when I was in college there was nothing better than Taco Bell at 2am after a night of drinking.
(yes, I'm old and it was still 18 to legally drink when I was in college)

One of my favorite things to order during a late night Taco Bell run?
Mexican Pizza...
Made me feel as I was still trying to be healthy, when really I was NOT!

I haven't eaten at Taco Bell in probably 15-years but I do love any type of pizza.
Tonight, Brad and I talked about doing lettuce taco wraps but we had a bunch of whole wheat wraps we recently bought at Sam's so we decided on ground turkey tacos.
Then, at the last minute, while I was putting Shelby to bed Brad decided to make turkey burger Mexican pizza/flat breads.

I don't have detailed photos because I was up feeding Shelbs but here's the after.
It's basically a whole wheat tortilla that's toasted in a toaster oven until it's slightly firm.
Pull out put on foil
*Add ground turkey or beef(that's seasoned with taco spices)
*top with spinach, tomato, mozzarella, and put your toaster oven or regular oven on bake and watch until cheese is melted.
Remove and add a dollop of sour cream.
We were out of our fresh cilantro, but that would have made it even better.
Here's the finished product.
It was delish and we plan on using our leftover ingredients for tommorrow night's dinner because we LOVE pizza on a Friday night!!

Margherita Pizza

For those of you who don't know, we love us some homemade pizzas in the Stephens Casa.
Brad, makes his family's dough recipe and I come up with the ideas for toppings and such.
It generally ends well.
When on our ski trip we saw someone make a margherita pizza and I knew we had to try it at home.
The one main thing they did that I had not seen before was put mozzarella slices on top of the dough and sauce BEFORE putting any toppings on.
I think this makes a HUGE difference.
Next.
Fresh basil and tomatoes.
And, a little bit more shredded mozzarella cheese.
Bake and you get..
This!!!
OMG! Totally delicious!!
One thing I didn't mention is that you should put your dough crust into the oven at 400-degrees for 5-minutes BEFORE you put anything on it, then put your toppings on and bake for 10-minutes.
We also made a white pizza again.
They were all delish!

White Pizza

Brad and I are big into making homemade pizzas.
As you can see here and here.
On Saturday, after running errands, getting things done around the house, and watching the LSU Tigers and the VT Hokies win...we got ready for our pizza party.
Brad is obsessed with the chalkboard in our kitchen.
 I'm a huge fan of white pizzas when we dine out but had never attempted to make one at home.
I went online and found a recipe for white pizza sauce.
Found here.
2tbs. of butter
3tbs. of flour
1 cup of milk
garlic
pepper
1/2 cup of fresh parmigiano.
Cook on the stove.

As you can see I mixed in some dried basil as well.
When it comes to our pizza making we also cook our crust for 5-minutes in the oven before we put any toppings on.
It makes it crispier
 Then, the rest of the toppings.
We had some leftover brocolli so we put that, mushrooms and cheese on and popped it into the oven for 10-minutes.
 Here's what we got.
OMG!
It was so good!
Brad swears we're never making regular pizza again.
Simple, easy and fun to do together.
You have to try it.

Pizza Night

We stayed in last night and cooked dinner and enjoyed some wine. Earlier in the day Brad mentioned we should try and make our own homemade pizzas.

YAY! Then he got skeptical and said no because he thought they would turn out bad. Well, I talked him out of that.

Instead of making our own dough we picked up 2 dough balls from our local pizzeria. We came home and went to work.

Brad had the job of rolling out the dough..
I caught some funny pictures of him doing this.

Buddy was a little freaked by the whole thing especially when the dough was thrown into the air.

No meat on our pizzas..just veggies and cheese. I sauted them before putting them on there.

One thing we did that I didn't take a picture of is put the crust in the oven for 4-minutes BEFORE adding any of the toppings This makes it crispier and it did!
Then we added the toppings and let them cook for 15minutes.

Then WA-LAH! Let me tell you what kidz...These were A-W-E-S-O-M-E!!!

Aside from that I made some spinach/ricotta cakes from a recipe I found on some blog but can't locate it now.
These were FABULOUS! I had a ton of fresh spinach that was about to go bad so this is how I used it.
