Yummy Tomatoes!!

It's Summer tomato season and I'm always looking for different recipes that offer alternative ways in cooking them.
While in California this past week, my friend Christina introduced me to one of the best recipes yet!

Who remembers the movie Under the Tuscan Sun with Diane Lane?
Well, this recipe comes from a cookbook written by the author who wrote the book that was eventually turned into that screenplay.
The recipe is Roasted Tomato.
It's easy too!
*Chop up 60 or so Cherry tomatoes or 25 medium tomatoes
* 1/2 cup of olive oil
* 3 tbs of minced fresh rosemary
* 3 tbs of fresh oregano
* 3 tbs of fresh thyme leaves
* 5 garlic cloves
 * Mix all together in a bowl
 * Spread onto a baking pan and cook at 200-degrees for 2 hours.
It's a slow roast
Sounds too easy but let me tell you, they're yummy!
You can serve with crostini or bruschette for an appetizer.
I personally, could eat this for an entire meal!
The recipe also suggest throwing into a risotto.
Tonight, we're going to put it over grilled chicken.
The best part is?
Leftover tomatoes can be packed into jars, topped with olive oil and stored in the fridge for a week!

Enjoy and let me know what you think!
(just so you know though, I went to buy a Mason jar last night and didn't realize you couldn't just buy one, but instead you have to buy an entire case. I just put mine in a Tupperware container.)

  2. I only recently began to like tomatoes, so I'll have to give this a try!

And if you go to a craft store like AC Moore or Michaels (maybe Hobby Lobby - there isn't one near me so I wouldn't know) you can buy individual mason jars there! That's what I did when I only needed two. There is no reason I'd need 25 anytime soon! Ha!

  3. Looks absolutely mouth-wateringly delicious. I always cook mine at a higher temp, but I want to try it this way.

I saw individual mason jars at Hobby Lobby just last week!

  7. Mmmm...this looks so good! Thanks for sharing.

We moved into a new house last Oct and it's our first ever garden. We tried to grow tomatoes but I don't think we're doing it right...it doesn't look too healthy and we have no fruit yet! If it would only stop raining here we might have more luck!

I've just found your blog from the honeypiearchives and I've enjoyed reading. Nice to 'meet' you!

  10. I saved up spaghetti sauce jars before I started making my own sauce. Go ahead and invest in a box of Mason Jars because once you start researching all the toxins in food you don't want your child to have, you'll be canning like crazy! Skip the tup and invest in some glass containers with snap on lids. The tup will stain... and if it isn't BPA free, toss it.
