Easy Chicken and Dumplings

 Sundays at our home are all about comfort food.
Yesterday I did the rest of my Christmas shopping early in the day, then we went and saw a movie.

I had no real plans for dinner so when Brad asked what we should cook I thought of a meal that my boss suggested recently.

Chicken and dumplings, the easy way.
Don't get me wrong -- I grew up eating dumplings probably once a week.

My family can whip up a pot like it's a peanut butter and jelly but I have always been intimidated because of having to roast a chicken and make the dough.

That is -- until my boss suggested this recipe.

From there you:
-Put 3-cups of chicken stock, 2 cans of cream of chicken, and 2-or-3 cups of water in a pot and bring to a boil.
-Stir until all the cream of chicken is dissolved.
-Take your frozen dumplings and divide and throw into pot. DON'T STIR!
-Let the dumplings cook
-From there put your chicken in. We were last minute doing this so we bought a rotisserie chicken from the store but you could use left over chicken from another meal if you wanted or roast one(even though, this dish is cooked different if you roast your own.)
-Let simmer for a few minutes and serve.
Huge hit!
Having had a few dumplings in my life I can be pretty snobby about them, but for a quick meal I was pretty impressed with how these turned out!
The whole meal took less than 20-minutes!
Brad loved it too!
Buddy only wishes he could have had a bite.
He camped out in the kitchen by the pot in hopes.
He does this every once in a while and it makes me laugh.

  2. I love the frozen dumplings sista!! That's the only way I make mine!!

    I am so excited as we are having them at my grandmothers for Christmas Eve....something different than the norm. PLUS her's will be homemade :) Grandmother's can do that....

  3. I'm printing this out b/c I have never eaten (or made) chicken & dumplings. BUT...have always wanted to! Just perfect for a cold day when you stay in doors. Mmmm.....

    Buddy & Louis have so much in common. I do believe they would be fast friends :)

  9. Yum! I usually use refrigerated biscuits as my dumpling short cut but this sounds even better. Brandon loves chicken and dumplings...will def give this a try. Thanks for sharing!

  10. I have been craving some good chicken and dumplings!! Ok, so when you say "divide the dumplings", does that mean you don't put all of them in at the same time?

    Forgive me. I'm on sinus and cold meds and I'm obviously not thinking clearly. All I know is that hubby needs to go to the store and get me these ingredients!!!!
