Perfect Fall Dinner and Geaux Tigers!


Just a quick post today to tell you about the yummy dinner Brad and I made last night.
Of course, my plating isn't ultra pretty but it was ultra delish!
Very Fall-like too.
Brad put together the brussels sprouts with olive oil, garlic, salt, pepper and a little bit of parmesan.
Roasted them for 20-minutes.
I put together the chicken parmesan on a bed of spaghetti squash.
I had not done spaghetti squash in several years and Brad, having never tried it, was hesitant.
BUT..
It was a HUGE hit!
No recipes.. just simple.
Instead of baking the squash I did it in the microwave.
I cut it in half, scooped out seeds, put in a dish face down with a 1/4 cup of water over it and microwaved for 10-minutes.
 The only other bit of news for today is.....
GEAUX TIGERS!
Countdown to kickoff as my LSU Tigers take on BAMA this Saturday at 8pm EST.
Yes, I show my school pride at work and at home.

  1. Um-seriously- that dinner IS EXACTLY like one we have! Easy and healthy! BIG BIG fans of Spaghetti squash and brussels sprouts! The hardest part is burning my hands scooping out the squash after it cooks.

  4. YUMMERS!! You have inspired to make some spaghetti squash myself. Re: Ashley's comment, I think scooping it out with a fork is the best approach.

  5. That chicken looks delish! I have an aversion to brussel sprouts, but if I liked them at all...I'm sure those would be great :)

  11. I love veggies, but I don't think I've ever tried brussels sprouts or spaghetti squash!! Terrible, I know! brussels sprouts seem intimating but you make them sound easy so maybe I will give it a try!
